If I have a wheel with an SRAM 11 speed cassette on it, can I simply change the cassette to a Shimano cassette on the same hub, and use the wheel on a Shimano groupset ?

I know some reindexing would be required, but are Shimano and SRAM hubs compatible ?

You don't even need to change the cassette - Shimano and SRAM cassettes are interchangeable.

This. I have Shimano cassettes on all my wheels, which I swap between bikes, and my roadie is Shimano whilst my TT is SRAM.
